It feels really good to be able to cook and move around again. We haven’t gone out to eat in a restaurant for weeks now, so I have to get kind of creative in the kitchen. So, here’s a simple pasta dish that you guys can try if you’d like! We enjoyed it!
My inspiration for this dish came from Pinterest, however I modified it a little bit because the sauce on its own was too heavy and lemon-y for me. Here’s the link.
- Half box of thin spaghetti (boiled in water with salt)
- 8 ounces medium shrimp, peeled. (I used Publix frozen shrimp)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika, or more, to taste
- Kosher salt and freshly ground black pepper, to taste
- Crushed red pepper flakes
- Turkey (or real) bacon
For the cold sauce:
- 1/2 cup mayonnaise*
- 1/4 cup Thai sweet chili sauce (I used Maggi Thai chili sauce from Publix)
- 2 cloves garlic, pressed
- Juice of 1/2 lime, or more, to taste (I used lime juice not real limes)
- Pinch of crushed red pepper flakes
My addition to the sauce (warm):
- 1/2 cup heavy whipping cream
- Italian seasoning
- 1 tsp minced garlic
- Pepper & Salt to taste
- 1 fist of shredded mild cheddar cheese
- Mixed frozen veggies
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Mix all ingredients for cold sauce and set aside.
- Place shrimp onto the prepared baking sheet. Add olive oil, garlic, paprika, salt and pepper, to taste, and gently toss to combine. Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Remove from oven and set aside.
- In a pot, mix all ingredients for warm sauce on medium heat.
- In a large mixing bowl, mix pasta & both sauces together.
- Transfer pasta mixed in sauce and add shrimp into a baking casserole.
- Bake in oven for approximately 10-12 minutes.
- Microwave bacon strips and cut it up to small pieces. Mix into baking casserole with the rest of the pasta.
- Voila! Serve & enjoy!
